Technique

Boikey’s Biltong combines the best of the traditional method with the latest in modern technology. High quality cuts of USDA bottom round roast are cured with all natural vinegar and spices, then air dried in a state of the art facility.

It takes a full week to naturally cure Boikey’s Biltong, which is 42 times longer than it takes to make jerky. This allows for the development of deep flavor and complexity that isn’t possible with rapid heat curing. The result is an unbelievably tender, flavorful slice often compared to the melt in your mouth texture of high end prosciutto.

Boikey’s Backstory

While visiting South Africa, an American entrepreneur discovered the great taste of Biltong and realized he couldn't live without it. As luck would have it, he met a successful South African Biltong producer in the US. Their collaboration resulted in Boikey's Biltong, made from a native South African recipe carefully adapted with American grown spices creating a savory snack everyone loves. A grant to support local job development in North Carolina, repurposing a decommissioned facility, helped their vision become a reality.
